I don't think that at that age she would learn a lot of French even if you could find a school that would take her for a couple of hours a day unless she was constantly exposed to and using it outside those times and unless you are staying a fairly long time in Paris. At that age, she would actually likely learn more simply by playing and otherwise interacting with French children though that will be difficult since kids her age will be in school and not likely to be playing much in the parks after school in November. Any French she did learn in Paris she would probably forget within a couple of weeks of returning home in any case unless she had constant reinforcement.
If you do not speak French yourself, IMO a better strategy would be for you to learn the language and then start speaking French with your daughter as soon as you have learned even a little. Any five year-old can learn bonjour and au revoir and s'il vous plaît and merci beaucoup and a few other similar phrases and then start building on those. I think that would likely have more permanent results, especially if it is a "game" she plays with Mommy.
There are picture books and DVDs designed specifically for younger children learning French and CDs of French children's songs that you could learn and sing together. You could go shopping together for some of these and look for language-based children's games while you are in Paris. If you do that be aware that most DVDs sold in France will not work on most American players.
Not sure how much time you have before you go to Paris with your 5-yr old. But I can comment on some of this since we have kids 5yr and 2yr who speak French (and we're not French).
1. I like the one post of where you should learn the language and teach your kid...best thing we've ever done.
2. Get DVDs (store or Library) that have the French language tracks (Disney movies, Baby Einstein, Little Einstein, Caillou, Pixar movies, nickelodeon, etc.).
